The art of smoking is a time honored tradition that has been passed on for generations. Well worth the many hours it takes to smoke it using Hickory, a classic hard wood. We have three smokehouses on-site that are up and running most days to keep up with the high demand. We use farm fresh meats from the local farms.
To Cure: The use of Sodium Nitrate, salt, sugar and red dye #3.
To Uncure: The use of celery root juice powder, sea salt, and sugar.
The sugar is minimal just to make the curing process work.
We have chosen to use the healthier Uncured version for all of our smoked meats. Just 'cuz we love ya! Also, notice the prices have not changed!
